With no preventative measures (sealing, glazing, etc), this causes the isomalt to get sticky and/or cloudy from even the smallest bit of humidity. Isomalt is one of those things that might be daunting to work with at first, but I assure you, she is plenty easy :) Just make sure to wear gloves and be careful when melting it down, as this stuff is scorching and can burn you!
