Citric acid gets criticized because it is made using fermentation. That process uses a mold, but the final product is purified, crystallized citric acid with no mold present and is chemically identical to citric acid found in citrus fruit. If citric acid contained mold, you would see it. Dry commercial citric acid cannot contain live mold. It stores indefinitely, supports food preservation, improves mineral absorption, and is useful for preparedness and homesteading. | Rob Benson
